  • Use a rolling pin to roll the dough to an 8"x12" rectangle. Use a knife or pizza cutter to cut the dough into smaller 2"x4" rectangles.
  • Separate all of the sticks slightly and gently score the tops of each one.

  • To fry the doughnut sticks, pour 3-4 cups of oil into a deep wide pot. You want it to be a few inches deep. Slowly heat it up until the temperature of the oil is 365°. Use a candy or deep-fry thermometer to watch the temperature closely.
  • While the oil is heating, whisk together the glaze ingredients. Place paper towels on a sheet pan.
  • Once the oil reaches 370°, carefully place a few donuts in the hot oil. Be careful not to drop them and splash oil all over. They will sink at first, but should float to the top after a few seconds.
  • Do not add too many donuts to the pan because the oil temperature does drop as you add the room temperature dough.
  • Let the doughnuts fry 1 minute, then use a slotted spoon or spider strainer to turn the dough. Let them fry another minute, then remove and place the fried donuts on the paper towels to absorb the excess oil. The donuts are done when they are golden brown on each side.

  • Use cake flour for the best texture. It really does make the inside texture softer.
  • Use a pizza cutter to easily cut the dough into sticks. You can also cut the dough into circles and holes if you prefer.

Donut Sticks

These Donut Sticks are coated in a sweet glaze and taste just like your favorite Little Debbie treats. The deep-fried dough is crunchy on the outside and soft and cakey on the inside.

Ingredients

For the Dough

  • 3 ½ cups cake flour*
  • 1 ½ teaspoons baking powder
  • ½ teaspoon table salt
  • ½ teaspoon nutmeg
  • 4 tablespoons unsalted butter, softened
  • ⅔ cup granulated sugar
  • 1 large egg
  • ¼ cup sour cream
  • ½ cup buttermilk
  • 3-4 cups Canola oil, for frying

For the Glaze

  • 2 ¼ cups powdered sugar
  • ¾ teaspoon vanilla extract
  • 4 ½ tablespoons milk

Instructions

  1. Sift cake flour, baking powder, salt, and nutmeg into a bowl and set aside.
  2. Mix butter and sugar together. Add egg and sour cream. Mix again.
  3. Alternately add flour mixture and buttermilk until soft dough forms.
  4. Place dough on floured surface and knead 2-3 times to cover dough with flour.
  5. Roll out to an 8 X 12-inch rectangle. Cut into 12 pieces that are 2 X 4-inches using a pizza cutter. Lightly score top of donuts.
  6. Add 4 cups oil to deep pot and heat to 370°. Whisk together glaze while oil is heating up.
  7. Carefully drop a few donuts into hot oil and fry on both sides, turning once, until golden brown.
  8. Remove with a slotted spoon or spider strainer and place on a tray lined with paper towels.
  9. Let oil come back up to temperature and repeat with remaining dough.
  10. Once donuts are slightly cooled, dip each one in glaze and place on a wire rack over a tray to dry. Serve immediately.

Notes

  • *Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.
  • Use a thermometer to watch oil temperature carefully. Too hot and donuts can burn and not be cooked inside, too cool and donuts will soak up too much grease.
  • This recipe makes 12 donut sticks. You could cut them slightly thinner and make 14.
