Hi Friends and Happy Freaking Friday! Man it was a long one but we are coming to close and the weekend is near!
Today is Recipe Redux Day! Check out this month’s challenge:
“Whether you pack your lunch in a bento box, a brown bag or a retro cartoon character lunch box, don’t forget the bars and bites. Small squares or round bites can pack nutrition into a sweet or savory taste. Show us your favorite way to jazz up any type of lunch box.”
Last month I went a little exotic with the Sweet BourbonPlantains, so this month I thought I’d go with something a bit more practical since it’s a lunchbox challenge. I don’t know about you but when I pack my lunchbox I’m in the throw it together and move on with my life type mode.
Almonds (and other nuts) are simple round bites that can be brought to snack on by themselves or togive a little something extra to salads, yogurts, cottage cheese, oatmeal etc….
For this challenge, I wanted to try using coconut sugar since I’ve had the bag forever and haven’t done a thingwith it. I also really wanted to make lemon sugar almonds because I’ve totally been feeling lemon flavored things lately!
Apparently, the lemon flavor is not that easy to achieve, after many batches of almonds they only came out slightly lemony. I still really liked them though, and so did my Mother in Law. Mr. Hungry, on the other hand, is not a fan of lemon flavored anything so he wasn’t the biggest fan, although he did enjoy the batches that didn’t taste like lemon (just sweet from the coconut sugar).
Thecoconut sugar gave the almonds a slightly sweet but not overpowering flavor. I lovesugared, candied, and chocolate coated almonds any time or day. When it comes to portion control of those items though, that’s a whole other story!
I wanted these almonds to be slightly sweet (and slightly addictive) but a bit healthier than your traditional coated almonds. That way I can enjoythem every day in my lunch or for a snack! They came out perfect… slightly sweet and slightly lemony, with all the delicious crunch of an almond.

Coconut Sugar Lemon Almonds {Recipe Redux}

Ingredients
- 2 Cups Almonds
- 2 tbsp lemon juice
- 1 tsp lemon extract
- 3 tbsp coconut sugar or regular sugar
- 2 tsp egg whites
Instructions
Preheat oven to 300F.
Whisk egg whites until foamy and add to almonds.
Add lemon juice, extract and coconut sugar to almonds (in that order).
Bake for 15 minutes, toss, and bake an additional 15 minutes.
Let cool completely and store in an air tight container.

This is an unbiased plug….the almonds Kelli made were very delicious. I’m a fan of the not so healthy, chocolate, sugary covered almonds and I would eat the lemon ones over those. They were slightly soft but still crunchy, a perfect combo!
If you’re adventurous then I’d tell you all to make some, you won’t be disappointed. They had a lemony flavor but not at all overwhelming. Not sure where Mr Hungry gets a dislike for all things lemon……Mama S

Coconut sugar is amazing! And I love almonds, so this recipe is automatically delicious.

I recently acquired some coconut sugar on sale! 😀 I have lemon juice, but no lemon extract. I wonder how they’d turn out with orange extract? 😛

I bet it would be good, I made several batches with with just extract and never quite liked them till I added the juice anyways. Let me know if you try it!
